Both the petals and tubers of dahlia are edible. Tubers are high in fibre, potassium, vitamin C, and carbohydrates. They can be eaten raw or cooked. 

Dahlia tubers can deteriorate in cold, wet soil over winter. Plant in well-draining soil - raised beds are best. To preserve the for the next planting season, remove them from soil. Remove any damaged or mushy parts, and store in a cool, dry place like an enclosed garage.
